Angelo just got a molecular gastronomy kit for his birthday. Looking forward to seeing what results from this!
Actually, a few very good opportunities have just presented themselves. I'll let Angelo divulge the details if he so desires.
Back to molecular gastronomy, the second part of the kit arrived a minute ago. The first one was to make all kinds of crazy mojitos. The second one is a more general thing with a bunch of different chemicals and tools.
We're all going to die, all of us, what a circus! That alone should make us love each other but it doesn't. We are terrorized and flattened by trivialities, we are eaten up by nothing.
“No dictator, no invader, can hold an imprisoned population by force of arms forever. There is no greater power in the universe than the need for freedom. Against that power, governments and tyrants and armies cannot stand.”
I've got like 5 blogs that I visit for most of my recipes, and most of them are chick blogs that have mainly healthy recipes, but this one Closet Cooking has probably the best collection of recipes I've ever seen. And this guy isn't worried about the healthiness of his meals so he comes up with some pretty awesome ****.
I don't have work again until Monday so I'm about to go nuts on some of these recipes. I've got a bunch of strawberries right now, so tomorrow I'll be making:
Roasted Strawberry BBQ Sauce
Strawberry and Avocado SalsaIngredients
4 cups strawberries, hulled (if they are large cut them in half)
1/2 cup ketchup
2 tablespoons maple syrup
2 tablespoons strawberry preserves/jam
2 tablespoons balsamic vinegar
2 tablespoons soy sauce
1 chipotle chili in adobo, chopped
1 tablespoon garlic, grated
1 tablespoon ginger, grated
1 teaspoon Worcestershire sauce
1 teaspoon dijon mustard
2 tablespoons cilantro, chopped
Directions
Place the strawberries in a single layer on a baking pan lined with foil folded up on the sides to capture the juices and roast in a preheated 425F oven until they start to caramelize, about 15-20 minutes.
Bring everything except the cilantro to a boil, reduce the heat, simmer for 15 minutes, remove from heat, mix in the cilantro and puree in a food processor or blender or using an immersion blender.
Option: Add 4 slices of cooked and crumbled bacon.
For dinner I'll probably make these:Ingredients
1 1/4 cups strawberries, cut into small pieces
1/2 cup avocado, cut into small pieces
1 jalapeno, finely diced
1/4 cup red onion, finely diced
1 lime, juice and zest
1 handful cilantro, chopped
salt and pepper to taste
Directions
Mix everything.
Strawberry BBQ Chicken Club with Bacon, Avocado, and Goat Cheese
Ingredients
2 small chicken breasts, pounded thin
salt and pepper to taste
1/4 cup roasted strawberry BBQ sauce
2 buns
2-4 leaves lettuce
2-4 slices tomato
4 strips bacon, cooked
1 small avocado, sliced
2 tablespoons roasted strawberry BBQ sauce
2 tablespoons goat cheese, crumbled
Directions
Heat the grill to medium-high, brush it with oil, grill the chicken until just cooked, about 3-5 minutes per side, baste it with the strawberry BBQ sauce and let it cook for another minute.
Lightly grill the buns and assemble the sandwiches with bottom bun, lettuce, tomato, bacon, avocado, chicken, strawberry BBQ sauce, goat cheese and top bun.
And since I've got so much free time and strawberries, I'll probably go ahead and make a bottle of
Strawberry-Lime Marinade
Should make for a good day tomorrow...1 c lime juice (fresh squeezed is best)
1/2 c vegetable oil
1/2 c olive oil, light
2 tsp ground ginger
1 c strawberries, fresh (crushed)
2 tsp dill seeds
2 tsp white sugar
2 tsp honey
Blend and refrigerate
